St. Patrick’s Day Food

With St. Patrick’s day just around the corner I thought I’d look up a quick recipe for Colcannon, which is a traditional Irish meal consisting of mashed potatoes, Kale and onions simmered in milk. It’s a really quick and easy meal that’s perfect to use in schools. As is explained in the video below it’s tradition that you serve colcannon with either a ring or a coin hidden inside and it’s said that whoever finds it will be blessed with either wealth or marriage within a year. I’m not sure this is advisable with young kids though!

 

Ingredients

1/4 lbs. Kale / green Cabbage.
2 cups water.
1 tablespoon olive oil.
1 1/4 pounds peeled and quartered potatoes.
1 tablespoon chopped parsley.
1 cup cleaned and chopped leeks white part only.
1 cup milk.
Pinch of ground mace, salt and ground pepper to taste.
1/2 cup melted butter.

 

Method

Simmer kale or cabbage in 2 cups water and oil for 10 minutes , drain , chop fine.
Boil potatoes and water, simmer until they are tender.
Simmer the onions in milk for ten minutes till tender. 4.drain and puree the potatoes.
Add onions and their milk and cooked kale.
Mix, add mace and season with salt and pepper.
mound on a plate and pour on the melted butter.Garnish with parsley.
